Anatomy of a Knife

The big three — chef's knife, paring knife, serrated knife. Parts: blade, spine, bolster, handle, heel, tip, edge. Sharp knives are safer than dull ones. The pinch grip — thumb and forefinger pinch the blade not the handle.

Practice Task

Pick up your chef's knife and practice the pinch grip for 2 minutes. Just hold it. Get comfortable.
