Soft herbs (basil, parsley, cilantro, chives) vs hard herbs (rosemary, thyme, oregano). Chiffonade for basil — stack, roll, slice. Hard herbs go in early, soft herbs go in at the end.

Practice Task

Chiffonade 10 basil leaves. They should look like green ribbons.
