Chicken stock is the foundation of professional cooking. Roasted bones + mirepoix + aromatics + cold water + low simmer 3-4 hours. Never boil — it makes it cloudy. Stock has body from gelatin, broth has flavor but less body.

Make a full batch of chicken stock with Dad. It takes most of the day. Freeze in portions.
