Fond is concentrated flavor stuck to the pan after searing. Deglaze with wine or stock, scrape the fond, finish with butter. This is a pan sauce and it takes 5 minutes.

Practice Task

Sear a chicken breast, remove it, make a pan sauce in the same pan. Serve sauce over chicken.
